Tricolor tri-flavoured cheesecake



You need a springform pan (20 cm) and a parchment paper.

Ingredients :

  1. 200 gm digestive biscuits
  2. 4 tbsp butter 
  3. 400 gm cream cheese [For DIY see here]
  4. 200 ml whip cream
  5. 200 ml liquid white chocolate (you can use 200 ml condensed milk also)
  6. 200 ml Greek yogurt 
  7. 1/4 cup Spinach puree + 2tsp lemon juice  + 10 gm gelatin + 60 ml water, for the first layer.
  8. 4 tsp lemon juice + lemon jest + 10 ml gelatin + 60 ml water, for the second layer
  9. 1/4 cup carrot puree + 3 tsp paprika dry powder (homemade) + 2 tsp lemon juice + 10 gm gelatin + 60 ml water for the third layer.

Method:

  1. Crushed digestive biscuits and make powder. Add 4 table spoon butter and mix well. Place the powdered biscuits on the springform pan and press it with a glass. The base layer is ready. Keep in the fridge for 1 hour.
  2. In a large bowl, take cream cheese, whip cream, liquid white chocolate, Greek yogurt and whip it one by one with the hand blender.
  3. Now take three bowls and divide the cream cheese mixture equally in each bowl.  Keep them in the fridge.
  4. First take bowl #1. Add 1/4 cup spinach puree, 2 tsp lemon juice and mix gently with cream cheese mixture. Dissolve 10 gm gelatin in 60 ml warm water and mix well. Add gelatin to the spinach lemon cream cheese mixture slowly. Pour the above mixture on the biscuit layer (springform pan). Keep it in the fridge for at least 4-5 hours.
  5. Then to make the second layer, take bowl #2. Add 4 tsp lemon juice, lemon jest and mix gently with cream cheese mixture. Dissolve 10 gm gelatin in 60 ml warm water and mix nicely. Add gelatin to the cream cheese mixture. Pour the lemon cream cheese mixture on the spinach cream cheese layer. Keep it in the fridge for at least 8-9 hours.
  6. For the third layer, take bowl #3. Add 1/4 cup carrot puree, 3 tsp paprika powder, 2 tsp lemon juice and mix gently with the cream cheese mixture. Dissolve 10 gm gelatin in 60 ml warm water. Add gelatin to the carrot paprika lemon mixture slowly. Pour the mixture on the top of lemon cream cheese layer. Keep it again in the fridge for 10-12 hours. 

Your tri-color tri-flavored cheese cake is ready now.
